keratin (kerĀ“ә-tin) any of a family of scleroproteins that are principal constituents of epidermis, hair, nails, horny tissues, and the organic matrix of tooth enamel. Because it is insoluble in gastric juice, keratin is sometimes used to coat pills that are meant to pass through the stomach unchanged.
