glycerol (glisīәr-ol) a trihydric sugar alcohol, CH2 OH · CHOH · CH2 OH, which is a component of fats. It is an intermediate in the metabolism of fatty acids and serves as a phosphate acceptor. Pharmaceutical preparations are called glycerin.
