ascorbic acid, a substance necessary for the health of supporting tissues such as bone, cartilage, and connective tissue; deficiency causes
scurvy. Vitamin C is found in fresh fruits and vegetables, including citrus fruits, tomatoes, brussels sprouts, and to some extent
whole potatoes. Cooking and storage destroy much of the vitamin C content of foods.
